Dave’s Weekly Market Update

Eggs:
     The egg market went up another .23 this week once again overeating to market conditions. Retail demand is driving the increase.  We are hearing more to come but the market has already surpassed earlier expectations.
Butter:
     Butter was pretty firm this week resulting in no change in our weekly prices.
Cheese:
     The Block market is leading the correction and has been dropping rapidly. The Barrel (American Cheese) is lagging way behind.The spread is inverted with the Barrel being  much higher than the Block. I expect a rapid decline in the Barrel to get the spread back into the historical trend with Block being a few pennies higher than the Barrel.
A reminder on a few new dairy items.
We are now stocking shredded Fontina packed 4/5 lb and have a variety pack of cheese cubes for holiday platters and catering. There are 4/3 lb bags per case. One each of the following, Swiss, Colby Jack (marbled), Pepper Jack and yellow Cheddar. We are doing well with the Wensleydales with added fruit. We have blueberry, apricot and the best volume one cranberry in stock to meet your customers holiday needs.
