DAVE’S WEEKLY MARKET UPDATE

Happy Thursday,

Eggs,
     Once again eggs remained stable. The medium eggs did rise .01 but no other movement. I still feel that the next move will be an increase.
Butter:
     Butter dropped again much to my surprise. I think this level should be a good opportunity but I have been wrong for the last month. Only 4 loads traded this week on the exchange which was very slow. Fundamentally the market should not be dropping as we approach the busiest demand time of year for butterfat
Cheese:
     Both Block and Barrel have rebounded sharply in the past 2 weeks. The markets have been very atypical as of late. The huge rise then quick drop followed by a huge rise again. It is a challenging time to maintain an inventory and profitability due to the volatility of the market that we have been experiencing.
As a reminder we are bringing in shredded Fontina next week to the Springfield location. It is the Bella Rosa label and is packed 4/5# per case. Please ask your salesperson about this growing new item.
