Dave’s Weekly Market Update!

Eggs:
     The white egg market remained stable this week. Browns did rise slightly as did mediums. The next move on the white eggs will be up as we are getting into the holiday season and baking increases.
Butter:
      Butter rebounded some this week ending up slightly higher. Activity at the CME did pick up some in the last few days. Will we finally see the increases I had expected?
Cheese:
     Both Block and Barrel rebounded after crashing last week. The spread is back to .25 which is way over historical levels. I was equally surprised to see this weeks movement as I was to see last weeks.
New item coming to Springfield!
As of the 15th we will be stocking shredded Fontina packed 4/5# bags We have had it as a special order and it seems to be growing. Please ask your salesperson about this great new item.
