DAVE’S WEEKLY MARKET UPDATE!

Eggs:
     Retail demand on eggs is just not there and the supply of eggs is bountiful. It is very unusual for the market to go down to these levels especially right before the Easter Passover holiday season. We may see more of a decline before it levels out. Farmers are losing money at these reduced pricing levels.
Pasteurized Shell Eggs are also now available.
       These are Davidson label and are 15 dozen large eggs per case. This is becoming a growing segment due to concerns about food safety. Please ask your sales rep about these to grow your sales.
Butter:
      Butter did not move this week and only 1 load changed hands at the CME. Foodservice and retail butter movement has been strong with the upcoming holidays. I see more of the same in the near future.
Cheese:
     Both Block and Barrel did not change much this week. The spread has narrowed back to .05. There were 9 loads of Blocks traded as opposed to 19 loads of Barrels. That is typical for this time of year as peak Barrel season is rapidly approaching. Get out those grills!
Saputo Gold Mozzarella has arrived and is in stock in Springfield. We have both loaf and shred both in whole milk and part skim. This goes up against Grande for quality for a lower price.
