DAVE’S WEEKLY MARKET UPDATE

Eggs:
     The egg market remained stable this week and the inventories are down across the country. I believe this may eliminate any major changes in the aftermath of the Thanksgiving baking season.
Butter:
     Butter bounced around this week and ended up flat for the week. Inventories are tight in the North East but seem balanced in other parts of the country.
Cheese:
     The cheese market had some drops this week. The close was lower than the averages so potentially we will see more drops next week. End users are getting a break in cheese costs which I am sure they are happy about.  Dairy wholesalers are having a challenging year trying to make margins as the markets keep dropping.
