DAVE’S WEEKLY MARKET UPDATE

Eggs:
     The national inventory on eggs has grown and it is forcing the market downwards. We are not expecting a major decline but you never know!
Butter:
     Butter moved up slightly this week and continues to trade in a fairly narrow range. Ice cream demand will slow some after the holiday weekend but demand for butterfat will rise as we enter the 4th quarter. Manufacturers will start gearing up for the holidays and use more butterfat as an ingredient. History used to be that the market skyrocketed in this quarter but the last 2 years it has dropped. Futures markets show a slight increase but nothing too substantial. Due to Butter being higher  in the last month all fluid cream items rose. 

Cheese:
     Both Block and Barrel rose slightly this week and seems fairly firm.The Block Barrel spread is .0575 which may become the new norm. Recently we have seen the spread as high as about .20 which leads to instability in the markets as the plants compete for milk.
Swiss cheese:
     In Springfield we are highlighting Block Essential Swiss at a great value. We have it packed 2/7#, 6/7# and 2/13# high cut (4×6). It has smaller eyes and a great flavor and it is value priced! Please ask us about this and have an inexpensive Swiss to offer to your customers.
