Dave’s Weekly Market Report

Happy Thursday.

Eggs:
     The medium egg market has been rising for the past 2 weeks and the large eggs started this week. We will see more increases next week as inventories are tight.
Butter:
     Much to my surprise the market jumped  .12 in the last 2 days. I am not sure what to expect. I was informed yesterday that Cabot is out of 55 lb unsalted butter cubes and may not produce them anymore. I will keep you posted.
     I have butter coming in from Wisconsin Monday to replace the cubes and the Cabot Farmstead value priced butter solid. I also have a value priced salt free solid coming also. I am hoping to have good acceptance to the new butter as we are working hard so you can always be competitive in the marketplace. Later in the week I will also have a European high fat butter to offer at aggressive pricing. Please ask your sales associate for more info on this exciting new line.
Cheese:
     Both block and barrel went up slightly this week. Land O Lakes came down .03 following their new pricing protocol. The Hilldale solid American by LOL went up .11. I missed that last week when I made the changes but now will move with all the other LOL American cheeses. The Block and Barrel spread has narrowed and is getting closer to where it should be. I believe we will settle somewhere within a few cents of this within the next few weeks but as always I must state that these are only my opinions and observations of the markets and can guarantee no results.
